Sharon served as a hostess for five years, but she says she never had any thoughts to purchase the restaurant during her service.  But that changed when she learned the Brennans planned to sell.

“I wanted to buy this restaurant because I thought to myself that Tim’s last day is my last day,” Sharon said.  “I wasn’t going to work here for anyone else; it would just be too different.” 

The couple says taking on Brennan’s is their first major business endeavor.
“When you commit yourself to something like this, it’s scary and exhilarating at the same time.”  Steve said.  “But we knew we were hard-working people and we’d make a go of it.” 

Tim Brennan would not simply sell his restaurant to the fist bidder.  He was impressed by the Hills and knew they would keep the legacy alive.

“That’s the secret of the whole thing, keeping it the way it is,” Tim said.  “When you leave your house, you know what it’s going to taste like at Brennan’s.  I know they’ll keep it that way.”

Sharon said Brennan’s is no place for the pre breaded, frozen fish at some restaurants.

“We hand-bread the fish ourselves,” Sharon said.  “We wash and rinse the fish many times.  We take very good care of our fish and that makes a huge difference in the taste of the product.” 

The Hills also make crab cakes from the Brennan’s family recipe. 

Menu additions since the change in ownership including key lime and chocolate pies. 

The couple has even considered adding a patio.

But customers should not expect many alterations to the fish house.

The boat wheels, fishing nets and painting s all remain, and not only to gibe Brennan’s a true aquatic feel but to also preserve everything the previous owners built over the years.

“I just respect what has been built here,” Sharon said.  “I don’t want it to change.”

Sharon says regular consumers were relieved when they heard that a precious employee would purchase and preserve the restaurant and provide guidance. 

“It’s still a family restaurant with good food and a food atmosphere,” Steve says.  “Why would you want to change that?”
